2-3 lbs boneless skinless chicken breasts..... (I used skin on, halved
breasts)
1 (16 ounce) can pineapple slices, drained, reserved
1 (15 ounce) can mandarin oranges, drained, reserved
PLACE CHICKEN IN BOTTOM OF CROCK POT. ARRANGE PINEAPPLE OVER CHICKEN.
SPOON MANDARIN ORANGES OVER & AROUND PINEAPPLE.
1/4 cup cornstarch....
1/4 cup brown sugar......
2 tablespoons lemon juice..(I used lime)
1/4 teaspoon salt.....
1/4 teaspoon ground ginger
Use reserved juices to dissolve these ingredients. Then pour over top
of fruit.
Cover and cook for 4-5 hours on low or 2-3 hours on high. Serve with
steamed rice. (I used Success brand, brown rice. Lee, your rice cooker
will be great, I imagine.)
I thought it was delicious & will be using this recipe again, FOR SURE
{ Am considering just making the sauce & cooking in sauce pan on stove.
Would want to add some chicken broth for the flavor, if I do this. Think
it would be great as sauce on burgers with a pineapple ring in bun.
Lots of possibilities if you discover you like it, too.)
